The photo below shows my results at trying to produce a "South-Beach-Diet-friendly" loaf of bread (i.e., whole wheat flour, no sugar). Scroll down to see the ingredients and steps that resulted in the loaf pictured. I'm looking for suggestions on how to improve the rising of the loaf.



      Ingredients:
     1-1/2 Cups + 2 Tbsps      Tepid water (75-80 deg.)
3-3/4 Cups Whole wheat bread flour (the pkg. didn't specify that it was "bread" flour)
2 Tbsps Dry milk
1-1/2 Tsps Salt
1-1/2 Tbsps Wheat Glutin
2 Tbsps Margarine (substituted for butter)
2 Tbsps Honey
1 Tbsp Molasses
3 Tsps Active-Dry Yeast


      Steps:

  1. In a large enough bowl, mix the flour, dry milk, salt, and wheat glutin.
  2. Cut the margarine into the mix.
  3. Add the honey and molasses to the mix. Stir.
  4. Measure the water exactly, using a thermometer to make sure the water is at a temperature of 75-80 degrees F. Pour the water into the bread-machine pan.
  5. Spoon the flour mixture into the bread-machine pan so that it covers the water.
  6. Sprinkle the yeast on top of the flour.
  7. Select “Dough” on the bread machine, and let the kneading cycle start.
  8. Set a timer. After 7 minutes, stop the kneading process by unplugging the bread machine. This additional kneading is helpful for whole wheat flour.
  9. Plug the bread machine in again. Select and run the “Dough” kneading cycle again, letting it complete its cycle this time.

10.    After the second kneading, let the dough rise in the bread-machine pan.

11.    Grease and flour a bread-loaf pan.

12.    Dump the dough from the bread-machine pan into the loaf pan. Don’t punch it down.

13.    Preheat the oven for a few minutes to no more than 80 degrees F. Meanwhile, boil some water on the stove, transfer the water to a pan, and place the pan in the oven. Put the loaf in the oven. Turn on the oven light to help maintain the heat.

14.   When the dough has risen to the desired level, temporarily remove it from the oven and preheat the oven to 350 degrees.

15.   Bake the bread for about 30 minutes on the center rack.
